Ingredients
- Eggs - 2 pieces
- Butter - 1 tablespoon
- Cheese, grated - 50g
- Salt - 1 pinch
- Black pepper - 1 pinch
- Milk - 0.5 cup
- Parsley - a couple of sprigs
Recipe
- Place a small non-stick frying pan on a low heat to warm up.
- Add 1 tablespoon of butter to the hot pan.
- Add 1 sliced tomato to the hot pan.
- Crack 2 eggs into a mixing bowl, add 0.5 cup of milk, season with a pinch of sea salt and black pepper, then beat well with a fork until fully combined.
- Carefully pour eggs in the pot. Use a spatula or spoon to swirl the eggs around the pan a little.
- When the omelette begins to cook and firm up, but still has a little raw egg on top, sprinkle over the cheese. Close the pan with a lid and cook 1 min.
